GARLIC AND HERB BUTTER
200 g PRESIDENT BUTTER SALTED, soften
4 garlic cloves, minced
2 tablespoons fresh parsley, finely chopped
½ tablespoon fresh thyme, finely chopped (optional)
1 lemon, zested
Sea salt and pepper to taste
Place a sheet of baking paper out on your workbench, along with 2 pieces of kitchen twine.
In a medium bowl, add the garlic, parsley, thyme, lemon zest, a good pinch of sea salt and a crack of pepper, and massage everything into the butter using your hands (tip: use disposable gloves).
Once it’s all mixed through, place all the butter in your hands and start to shape it into a log. Place the herb butter onto the baking paper and carefully roll it up, and secure the ends with the kitchen twine. Refrigerate to set.
Cut off round disks and serve it on steak, chicken, fish or simple steamed veggies.
