PEANUT BUTTER AND CHOCOLATE PROTEIN BALLS

(Makes 20)

 

INGREDIENTS

12 fresh Medjool dates, pitted (soaked)

¼ cup almonds (soaked)

¼ cup cashews (soaked)

1 cup oats

¼ cup BONDI PROTEIN CO SLIM IT BLEND CHOCOLATE

¼ cup cacao powder

¼ teaspoon cinnamon

1 teaspoon vanilla extract

1 tablespoon maple syrup

½ cup natural peanut butter (alternatively you can use ABC or nut butter of your choice)

 

METHOD

Add dates, almonds and cashews into a bowl, cover it with water and allow to soak for 20 minutes. Once soaked, drain off the liquid (reserve some of the liquid to use later on).  In a food processor add in the dates, almonds, cashews and oats, and give it a good blitz until the mixture becomes crumbly.

Now add in the BONDI PROTEIN CO SLIM IT BLEND CHOCOLATE, cacao, cinnamon, vanilla extract, maple syrup, and peanut butter and process until well combined. If the mixture seems to be dry, then add in a few tablespoons of the reserved date and nut liquid and pulse a few times (Continue to add more liquid until the mixture becomes sticky).

Line a baking tray with baking paper, and divide the mixture into 20 piles, then start to roll them into balls using the palm of your hands. If your anything like me and love things extra chocolatey, then roll them in some cacao powder or alternatively you can coat them in chia seeds for some extra crunch, or desiccated coconut.

*These protein balls are quite peanut buttery, but if you prefer a milder nutty flavour, I would definitely swap out the peanut butter for ABC spread or another nut butter.
