Marbled Mixed Berry Popsicles

Makes 6


2 cups frozen mixed berries
1/3 cup fresh lemon juice
½ cup coconut water
1 tablespoon rice malt syrup
1 teaspoon vanilla bean paste
½ cup Greek yoghurt


Place mixed berries, lemon juice, coconut water and rice malt syrup into a blender and pulse until well combined (If you’re like me and like the chunks, then pulse for less). Set aside

In a small bow, combine the Greek yoghurt and vanilla bean paste and give it a mix. Grab the moulds and to get a marbled effect just place a few tablespoons of the berry mixture, followed with a few tablespoons of the yoghurt. Repeat this process until you have reached the top and continue with the remaining moulds. Let it set in the freezer for 6-8 hours or overnight.
