Lime and Lychee Martini Popsicles (Adult Only)

Makes 6


300 ml lychee liquid (drained from lychee tin)
300 ml water
¼ cup brown sugar
2 cm ginger, sliced
7 large kaffir lime leaves (finely slice 5 and leave 2 whole)
1 medium lime, zested and juiced (around 3 tablespoons)
1 x 560 g can lychee, drained (reserve liquid)
¾ cup Vodka


In a small saucepan heat the lychee liquid, water, sugar, ginger and two whole kaffir lime leaves over medium heat. Bring to a boil, then turn down to low and simmer for around 5 minutes or until the liquid has reduced by half. Once the sugar syrup is done, remove the ginger and lime leaves. Set aside to cool.

Place the finely sliced kaffir lime leaves, lime zest and juice, lychees and vodka into a blender and pulse until you get the desired texture (I like mine with bits in it). Now add in the cooled sugar syrup and give it one more quick pulse. Grab the icy pole moulds and pour in the liquid and let it set for 6-8 hours or overnight.
