KIM’S SALAD

Serves 2

 

INGREDIENTS

2 tablespoons dried chickpeas (soak them overnight and then cook them for 3 mins in the microwave while making the salad. Rinse and add cold to the salad).

100 g mixed leaves, chopped

2 kale leaves, chopped

6 rocket leaves, chopped

6 lettuce leaves, chopped (any lettuce is fine)

few sprigs of fresh continental parsley, finely chopped

Sprig of basil, finely chopped

2 small tomatoes, chopped

½ red capsicum, chopped

1 tablespoon red onion, finely chopped (or 1 spring onion, finely chopped)

1 avocado, chopped

1 Lebanese cucumber, chopped

1 small or ½ large carrot, shredded

½ medium beetroot, shredded

½ small or 1/3 large zucchini, shredded

Fresh ground black pepper to taste

1 teaspoon turmeric (optional)

1 tablespoon balsamic vinegar (optional)

METHOD

Place all the ingredients into a large bowl, give it a good mix and serve. Enjoy!
