2 little gem lettuce or baby cos, washed and thoroughly dried
3 boiled eggs, quartered
200 g AUSTRALIAN PORK shortcut bacon
¾ cup croutons
¼ cup shaved parmesan cheese
Caesar dressing (Good quality store-bought)
Bring a pot of water up to a boil over high heat and add in the eggs. Cook for 7-9 minutes, depending on how you prefer them (I cooked mine for 9 minutes). Once cooked, run them under cold water for 2 minutes, then peel and quarter them.
Meanwhile, heat a frying pan over medium heat and add the AUSTRALIAN PORK shortcut bacon. Cook for around 3 minutes on each side, or until it’s nice and crispy.
Grab a shallow salad bowl and arrange the whole lettuce leaves. Carefully place the eggs around the lettuce, followed by the AUSTRALIAN PORK shortcut bacon. Scatter over the croutons and shaved parmesan cheese, then drizzle over the Caesar dressing. Enjoy!
