BAILEYS SUMMER BERRY PAVLOVA MESS

Serves 2

 

INGREDIENTS

200 ml thickened cream, whipped

100 ml BAILEYS SUMMER BERRY PAVLOVA LIQUEUR

50 g store-bought meringue, crushed

1 punnet (250 g) of fresh strawberries, roughly chopped

GARNISH

¼ cup freeze-dried strawberries

4 gingernut biscuits, crushed (you could also use scotch fingers or shortbread)

 

METHOD

Place the cream into a large bowl and whisk on high until it starts to thicken. Stream in the BAILEYS SUMMER BERRY PAVLOVA LIQUEUR and continue to whisk until soft peaks form.

Add the crushed-up meringue and fresh strawberries, and carefully fold them through the cream using a large metal spoon or spatula.

Divide the cream mixture into two dessert glasses and top with freeze-dried strawberries and gingernut biscuits.
