1 bunch broccolini
1 bunch choy sum, sliced lengthways
250 g snow peas, sliced diagonally
1 tablespoon coconut oil
2 tablespoon red curry paste
½ cup liquid from poached chicken
Grab a chopping board and cut all the veggies accordingly. You want the broccolini and choy sum similar sizes, so if your bunch of broccolini has quite thick stems, just cut in half, lengthways.
Heat the coconut oil in a large frying pan over low heat and add in the curry paste and let it cook out the spices for a minute. Increase it to medium heat and add in the veggies and give it a good toss through the curry paste, letting it sauté for a few minutes. Now add the liquid from the Poached Chicken, give it another good mix, and cook for a further 2-3 minutes.
