PULLED PORK TACOS

Serves 4

 

PINEAPPLE SALSA

1 small red onion, finely diced

1 lime, zested and juiced

1 medium (well ripened) pineapple, skin and core removed, and finely diced

1 long red chilli, deseeded and finely diced

¼ cup coriander leaves, finely chopped

INGREDIENTS

8 small tortillas, heated

4 cups PULLED PORK, heated

½ red cabbage, finely shredded

1 cup coriander leaves

1 lime

1 large red chilli, finely sliced (optional)

 

METHOD

In a medium-size bowl add the red onion and lime juice, and give it a little mix, then let it stand for at least 20 minutes (this process takes some of the sharpness away from the raw onion).

Add the pineapple, lime zest, chilli and coriander to the red onions and give it a really good mix. Set it aside.

Layout all the tortillas on a large board or tray, then add a little red cabbage to each, followed by the pulled pork, pineapple salsa and fresh coriander leaves (The key is not to overfill the tortillas, as they will be way too messy to eat!).

squeeze over some fresh lime juice and scatter over some sliced red chilli. Enjoy!
